The Le's Summary:

A good movie, that is far slower than the first. Some will be disappointed due to the large amount of dialogue and little amount of action, but I for one enjoyed it and thought it was a very good conclusion to the Kill Bill series.

I'm pretty sure his main influence for Kill Bill, vol. 2 was those old spaghetti westerns unlike vol. 1 which was mostly a tribute to Hong Kong movies.

I thought there was a lot of noir influences into the second movie, most notably the start and end sequences.

If you want to count the influences there's Kung Fu movies (pts 1 & 2, especially 2), Samurai movies (pt 1, the entire battle with the Crazy 88's), Spaghetti Western (much of pt 2), and Noir (pt 2). All mixed together with Tarantino's wonderfully irreverent sense of humor.

Giallos (scene in Vol. 1 with the Theme from Twisted Nerve)

Blaxploitation (deleted scene with Da Moe from either Vol. 1 or 2 (not sure))

There's a lot of specific influences as well, such as the Game of Death tracksuit and the Executioners from Shao-lin homage with Pai Mei and the Hattori Hanzo thing with that Japanese TV show whose name I forget.
