Seventh Sea has a nice mechanic for death: The players cannot die under normal circumstances. However the GM is encouraged to find out in which dramatic fashion they would like their character to die. eg figthing a horde of monsters so their friends can escape, or winning a duel to find their opponent had used a poisoned foil (spot the Shakespeare student). Your character can then, subject to GM apporval, only die under those circumstances. So when you get into a duel with a sneaky git, or find a horde of baddies, the player stats to sweat as his time might come up.
I thought this was pretty nifty, but you need a good GM to disallow players with 'would never happen ever' situations, or just to make them nearly happen every session: "No, you're OK, the tapdancing chicken on the clifftop is wearing a blue hat not a red one, you are not going to die here!"
