I have visited a few underground forts in the French Alps. They were built between 1890 and 1939 to prevent the Italians from crossing the valleys they controlled, and I doubt they were actually used. They could easily hold 500 soldiers (which means you might pack more), but their main feature was artillery, and the fact they were really hard to see.
Hallways are wide and flat, rooms are generally of rectangular shape, and ceilings are quite high. You don't even need to be a genius to find your way in this :)
Of course, it isn't like the Moria.
