I just want to make one obvious point about fantasy races in campaigns, namely that it is not absolutely necessary to use every race appearing in the PHB. I'm not altogether convinced that you need gnomes, halflings, and so on; having too many non-human cultures could even take the focus away from the dragons, and that is probably the last thing you want to do.
Just my opinion there; I'm personally not too fond of fantasy worlds with too many races at once (with the exception of planar travel campaigns such as Planescape, but that's a completely different topic).
