Okay, I've been leveling as Enh(68-and-a-half so far), I'm thinking about going back to Elemental but playing the two-weapon death-dealer has been a lot of fun. I know I don't want to be Restore.
Oh, and I'm on a PvP server. I have enough money for my first flyer and I'm a few hundred gp towards my epic flyer. I'm Herbalism and Skinning, at least until my epic flyer is purchased.
What's your advice for what I should do when I hit 70? How should I gear up, what should my talent-build be, what are good ways to make money fast?

Dailies on SSO will get you money, but finishing out your quests in SMV and NS will get you money AND gear (especially the group ones that you'll need help with). But you can only do them once; daily quests can be done once a day. A lot of newer 70s I know cherry-pick some easy dailies to supplement and slow down their questing in SMV and NS.

Not a Shaman per say, but good ways of getting money are as follows.
-Doing Dailies (Shattered Sun Offensive particularly)
-Tekkora Forest (slaying the Giant Plant people and then harvesting them for motes of life)
-Nagrand (Animal pelts can be big money, but its a little more hit and miss. Check the values)
-Fishing if you wish for motes of Water.
-Herbs (Netherbloom, Fel Lotus,... the list goes on)
As for gearing up, there are three major ways to get to that point.
1) PVP as this can get you the honor and marks you need to buy some rather nice items.
2) Dungeons, Heroic and Note (for Marks of Justice and nice loot)
3) Crafting possibly.
4) Quests can be helpful but is not sure.

At 70, all three shaman trees are very functional. They all work equally well, but they do different things.
What do you want out of your build?
As for cash, yeah, SSO dailies are good for that.

The Fel Leather gear (blue crafted leather) is good stuff, and unlikely to become bad with the patch. Leatherworking is an extremely good option anyway - a lot of the BoE recipes for BoP purples should be getting quite cheap. Drums are love.
Until the patch, very slow weapons in both hands are vastly preferred. The DPS on a fast offhand is extremely poor. That will probably change in the next patch, but whether fast or slow will be better remains to be seen. Your best options for weapons are Blacksmithing (very good, very expensive), PVP (average, costs you only time) and Karazhan (relies on getting a raid and luck). I think there's some Heroic drops too.
Strength is currently preferred for gems, but is going to be nerfed (in favour of agility and int) - you might want to gem for raw attack power with green or blue gems to be on the safe side. Don't blow cash on epic gems yet. You'll probably want to get a bit of +hit on your gear - at least 3%, for when the Resto talent goes away - but don't go nuts, it's not as good for us as rogues. Get a Relentless Earthstorm Diamond for a meta socket if you can.
Don't gear for mp5, ever :) Int is currently a disadvantage on gear, but will be buffed soon, so I wouldn't avoid it. Crit is very good.
Talent build should probably be Enhance/Resto for the 3% hit talent until the patch, then Enhance/Elemental afterwards.
