You also have to note that Arya's story adds to the 'epic' part of this epic story. Her travels throughout the land show that the war didn't just affect the Starks, Lannisters, etcetera, but that it shook the entire country.

As for Sansa's story, I always thought that this seemingly 'too obvious' character would shape up to be something surprising.
