...that I've always found to be a bit annoying is the lack of player interaction. My games typically take 3-4 hours, but I think it seems longer because you're not wheeling and dealing with anybody along the way.

I once played a game variant allowing players to trade cards with each other. This speeds up the game a lot, and gives people something to do when it's not their turn.
