You get one. You can make more by "splitting your reaction", but this increases the difficulty dramatically. This makes it very hard to fight multiple opponents, which I think is realistic.

You've got three health attributes: Blood, Body and Incapacity. Blood is how much blood you can loose (e.g. from slicing attacks), Body is how much blunt damage you can take and INCY is how long you can keep going after being mortally wounded. What I like is that there's a lot of attacks that don't do "damage" in the traditional sense. Instead, they cripple, or cause pain, or blind, or knock people down, etc. I'm no martial arts expert but I think this is a realistic touch as well.
