I've played in games with lots and very little bookkeeping - typically I'm the one doing it, since I'm usually showing the game to new players
as well as group preferences, I think the amount of bookkeeping is adjusted by the bookkeeping tools on hand - scraps or pages of paper in my case
in a two player game we started out with small pages, but ended up not needing them by the end - I also managed to keep track of a 5 player game in my head for one session (this was after I was already familiar with uni, and there weren't too many traits per component!)
I initially thought scene tracking ala the Universalis Arena (linked by Bob) would be the most important bookkeeping, but in retrospect it's *only* important if you're planning on keeping a record of the story post-session (e.g. to use as background in another game; script for a story/comic etc)
