Fore me the answer to "why not?" is simple--because I think they are a rather silly concept and because I don't like them (i.e. for mostly aesthetic reasons). Which is of course totally irrelevant to the issue of defining the genre, but, if enough fantasy readers (or perhaps writers? publishers?) share this part of my aesthetics, might explain the mechas' conspicuous absence.
I wasn't actually talking about why they haven't been taken up before. But in that case...
I think it's a newness thing more then anything else- it's not as though they're any more silly then any other element in bog-standard fantasy. It can also be partially attributed to the whole "start off week and level up" cliche infesting fantasy games. Mecha don't really gell with the notion that characters should be afraid to get in fights with rats and kittens.
