I ran into that problem, too. I don't have any serious power gamers, so it was enough to just encourage them to settle for fewer dice, especially in mook fights. Against Nemeses, there's enough back-and-forth that the dice pool limit just tells us when to stop sparring and roll
Something else that worked well was to set lower limits during fights that come early in the game. With a 4-dice limit, of instance, you get more concise, brutal attacks. Sopranos style violence, if you will. In Pulp-Fu, I encourage players to earn dice by describing themselves _getting hit_, which adds some more variety and makes those last coupla details less repetitive.
