I am basing my statment about what most gamers want by looking at what seem to be the most popular games and seeing how many of those allow a veteran PC (1st level D&D characters don't count) to die from a single bullet wound. The only one that comes to mind is CoC (or maybe some d20 variant that uses critical hits to Vitality points or something similar), and even that is survivable. I could be wrong and others are certainly welcome to bring up counter-examples that I have forgotten. This is not to say that PCs cannot die in these other systems, but just not with the brutal swiftness that you seem to want.
