Head maybe, I´m no specialist, so step away from this one.

(On the other hand, there ARE people who survived massive damage to the brain, so it too isn´t certain. And probably not an instant kill)

Vital organs on the other hand: Yes, many people die from hits to their vital organs. BUT they don´t die instantly. They die beause of blood loss or because of organ failure, (Or other complications later on) but both take time. Sure, sometimes, "time" in this case means a minute, but it isn´t an "instant kill" which would be what you´re looking for, and what you seem to think is "realistic".

It isn´t. The instant kill is, if not a myth, then at least much rarer than hollywood and "common sense" would like us to believe.
