As my wife and waistline will attest, I'm a bit of a gourmand myself and always willing to discuss food. While I agree the idea of a "pork steak" doesn't sound all that grand, that's more an issue of nomenclature. One of the common cuts for a "beef steak" is the loin, specifically the tenderloin, from which we get our delicate filet mignon. Pork tenderloin is a very common cut as well, and one I'm sure you've heard of. There are similar analogues with other cuts of beef and pork. A ham is just a leg of pork, which from beef we refer to as the shank. However, I admit that you've made me curious about why we don't refer to cuts of pork generically as steaks as we do with beef.
