Actually, I sort of think the movies actually hold out pretty good on the guardian/concilor split. Disregarding potential Epic-ness, think about this. Mace Windu, let's call him a 20th level guardian. He sort of sucks at interpersonal stuff, he practically forced Anakin over to the dark side, not necessarily wise, but he whupped the Emperor all over the mat, without breaking a sweat. I mean, Palpatine wiped out three other jedi in the space of a second, here, just so we'd know he was a badass.
Yoda, 20, possibly 20+ level councilor, wise, skilled, knows all kinds of cool stuff about the force (mace didn't catch and rethrow lightning, he just blocked it...) but when it came down to a knock down drag out with the Emperor, he had to tuck tail and run, he just couldn't win.

Of course, it's pretty silly to argue RPG rules for a non-rpg sourced anything, but silly can be fun.

Oh, and just to cut down the 'but Dooku' bits obviously Count Dooku wasn't as big a badass as he thought he was. Anakin stomped him without too much difficulty in RotS, after all. Dooku just doesn't have the levels to stand up to Yoda in a fight, irregardless of their respective classes.

Speaking of SW Jedi Classes, not being able to go from on to the other seemed odd to me. A guardian that grows more introspective with time/age, a normally calm Councilor driven to action by events... Multiclassing was supposed to promote character growth and development in lines with literature, I guess Jedi are immune to change...
