i) How experienced with RPGs were your players? Do you think WotG be a good game for introducing new players to RPGs in general?
Very experienced players. I think WotG would make a decent introductory game, though - the systems aren't particularly complex, and the only places where there's a bit of dissonance tend to be where it's different to most games, not problematic in of themselves.

I'd suggest pregens/one shot for new players as an introduction before having them make character creation decisions, though.

ii) My one worry about the system (I have the Book of Wood PDF) is the amount of book-keeping, since every martial artist character has to keep track of the 5 colours of Chi, Joss, damage and Chi Aura usage. Did you or your players find this a problem, or am I worrying unnecessarily?
My players used dice, beads or scrap paper, and seemed to have no trouble at all; while there's a fair bit to keep track of, only damage ever gets much beyond 5, chi regain and chi aura are usually the same every turn, and the kung-fu costs are fairly simple. By way of comparison, they probably had a slightly easier time keeping track of stuff than in Exalted or D&D, though to be fair they were experienced players and don't have much trouble in those systems either.
