I don't mind the game difficulty being so random, but I've always had the opinion that the journey is often more interesting than the destination. It doesn't really matter if you lose or win this game, the most fun is had on the way. Although I have to say that some of the end fights against the GOO are boring dice rolling fests; FF should have figured out some less dice intensive ways to resolve them.

As for the curses, they don't come up that often, and if they really bother you, you could try this houserule: the curse stays in place only until you succeed in a task despite the curse, then it goes away. This is something to consider especially if playing a game where there aren't any fighting-oriented characters, meaning less monster trophies to spend (we always draw a single character randomly, no redraws allowed). It also resolves the problem if you have the misfortune to be cursed very early in the game, where there aren't trophies to spend on blessing.
