When you use Boons to grant another faery a title, the Boons are simply erased. You are not actually asking the fox and the witch for favors to turn Willow into a knight; you are essentially 'cashing in' the magical Boons they gave you to make Willow a Knight of Lilies.
It's faery magic - it's not supposed to make sense.
