They pan out about the same, actually, in my experience. Having run SWRPG extensively and Saga SWd20 several times, the latter is a bit slower, but I've no doubt it'll pick up once my group has a little more practice with it. That's after houseruling out the ever-slow Attacks Of Opportunity, though (Iterative attacks have rarely made it into play except against characters who are obviously of much lower level than the players, and even then didn't slow down play nearly as much, as I found out before houseruling out AOOs). Someone more experienced with d20 might be able to better the speed I can make with SW Saga.
