Which, IMO, would make perfect sense. I'm not sure why else one would be interested in a SW RPG.

Because sometimes people want to go beyond. Using your logic, Knights of the Old Republic would never have been a popular game. But it is hugely popular.

I guess I still don't get this. Where are these parts of the setting that are not being covered? Other than what's in the RPG and the two TPBs, there is no more source material. Was Luke supposed to just start making stuff up?

No. But it is clear that there is more to the setting than just revealed in the graphic novels - and Luke uses some of that extra information. There are entire segments of BE that cover information never revealed in the graphic novels. However they are still glossed over.
The entire layout of the Vaylen and their society is never explored in the two graphic novels - yet there it is in the RPG. So clearly Luke had access to more information.

I'm also not sure how the presence of the Vaylen threat (i.e., Infection) really limits what kinds of campaigns you can play. I mean, the Vaylen are what make the game not Traveller. What's the point of playing BE if you're not going to do anything remotely resembling the source material?

I think it is limiting in that the game is not really set up to provide a similar experience to the Infection rules (which are a great concept) but dealing with other kinds of stories. Like travelling around the setting. Which, by the way, is hinted at but never fully explored.
I think that, given the size of the book, it is reasonable that Luke focused on the core idea. But what I'm saying is that I would like to see supplements that expand the game out. And I'm sure there are others out there who also feel that way.

On top of this, if you really want to hack the thing, just remove Infection. Poof! Dune/Traveller-style RPG right there.

Hmmmm...
I agree with that, but I think I would also prefer maybe a simpler system. I like the idea behind things like the Technology Burner and Alien Burner - but would be nice if they were a little less rules-heavy. I don't expect that from Luke though - he's very anti-light rules because of the whole ability of GMs being able to fluff the rules to suit. Which I know Luke has rather strong views about.
But a guy can dream.

I certainly don't think that the game is bad because of a lack of these things.
