I'm gonna recommend what has sort of become my default "underrated" game, at least around these parts: Wet.
The graphics are somewhat weak for a current next gen title, but IMO the gameplay makes up for it. It's got style and attitude, and there's a lot of running around, jumping, slicing, and shooting (dual weapons even) to be had. It's definitely got personality if nothing else. As far as replayability...honestly the game is shorter than I would have liked. Beating the game does unlock challenge mode and (my favorite), the "Golden Bullet" difficulty--you can one shot enemies, but you take a lot of damage from attacks. Really keeps you on your toes.
Like I said, the graphics aren't as nice as they could be, but they make the best of it with some cinematic flourishes.

Just to add--Borderlands is definitely loads of fun too.

Uncharted 1 and Uncharted 2 are by far the best games on the PS3 that you can't get anywhere else. It takes the best of Indiana Jones, and turns it into an amazing gaming experience.
Valkyria Chronicles is a pretty good choice if you like turn-based strategy. The plot is predictable political correct whining, plus trademarked JRPG abscence of logic, that's shoved down your throat, but you can always skip the cut scenes. The actual gameplay is really good, and the graphics are SO pretty.

O. Now that I think about it, I'd probably like Uncharted 2, but I wonder about replayability.

I can't reccommend Uncharted 2 enough and I think it has replayability because:
1: It also has multiplayer, which I like a lot
2: The single player campaign is so good that I have played through most of it twice and would happily go downstairs and start playing again right now.

Definitely.
But to the OP, get the first game first. Adds a lot of character depth and background that will make the second game more enjoyable. And despite the lack of multiplayer, it is a great game in its own right.

I would second the Ratchet & Clank recommendation. The PS3 franchise starts with Tools of Destruction, there's a short downloadable interlude called "Quest for Booty" and the newest (and final) game just came out last month, "A Crack in Time".
The series had four games on the PS2, and they were all very well done with great writing and production. It's not a series that has ever gotten a lot of press (that I've seen) but is one of the great unsung game franchises out there.

Valkyria Chronicles is somehow bypassing my "ugh! not more anime!" filter. That's a seriously neat-looking game. I'll see if I can pick it up used (or maybe I can convince my wife that we should get a GameFly account and rent it first).
I'll probably pick up Borderlands at some point. I had a lot of fun with it on the 360, and it'll definitely be something to have for co-op play.

Rachet & Clank:Tools of Destruction. It's a somewhat silly platformer that's really, really well done.

It is well among my top series, and I woudl rate it as "Awesome" instead of "Somewhat Silly".
Quest for booty has Zombie Robot Space Pirates.

Yeah, there is a lot of humor in the series, but it works really well in the context of the games, playing on the tropes of the sci-fi action/adventure genre.
